Bamberska Potato Salad – My Mom’s Recipe.

My mom (God rest her soul) made this Bamberska potato salad every couple of weeks since the early 1990s. Back then recipes were not simply found online (the internet was in its infancy, and Google was not even a thing yet), but passed down by families, friends, and neighbours or just simply “invented” by trying things. No, the salad is not the reason she is no longer with us – in case you’re wondering… 😉 I am also not saying my mom “invented this salad” – that would be ridiculous. I am saying that in the times when you would find and clip interesting recipes from a newspaper or a magazine, this was one of the arrows in her culinary quiver. It was something we would eat with a few slices of buttered bread for supper. It was her delicious way of saving money. The ingredients are relatively cheap. It tastes fantastic and is very easy to make.

Ingredients:

  • Potatoes (Roosters)
  • Pickled Cornichons (got them in Lidl)
  • Onions (red or brown – makes no difference – whichever You prefer. Red adds a pop of color tho…)
  • Mayo (for me – Polish Winiary Dekoracyjny. Message for SloniuPL. “Kielecki Mayo SUCKS! 🤣🤣🤣”)
  • Salt
  • Grounded Black Pepper

Instructions:

  • Cook the potatoes with skin on
  • Peel and dice the onions

  • Dice the cornichons

  • When the potatoes are cooked, drain them, wait for them to cool off, then peel and dice them.

  • Throw the diced onions, cornichons and potatoes into a bowl.

  • Add mayo, salt and pepper. Stir all the ingredients well.

  • Put the salad into a fridge-safe containers and store in the fridge for up to 5 days.

Salad will taste good after several hours in the fridge – but it will taste amazing after 3 days in the fridge after all the flavours combined together. I am not giving You the amount of potatoes or onions deliberately. You will know better than anyone else how many onions is right for you.

Try a smaller batch first and if You like it – make a larger batch – it will save You time and money and after 3 days in the fridge it will taste duh-mazing. Make sure You keep it refrigerated and that can devour the whole batch in about 4 days. You do not want the food to go bad.
